Cookies I Made my Children in the 1970s
Gingersnap Cookies
3/4 cup shortening
1 cup sugar
1/4 cup molasses
1 beaten egg
2 cups flour
1/4 tsp. salt
2 tsp. soda
1 tsp. cinnamon
1 tsp. cloves
1 tsp. ginger
Cream shortening and sugar; add molasses and egg. Beat well. Sift dry ingredients; add to creamed mixture. Mix well. Roll in small balls; dip into additional sugar. Place 2 inches apart on greased cookie sheet.
Bake at 375 degrees for 15 minutes. Yield is 4 dozen cookies.
Sugar Cookies
1/2 cup butter
1/2 cup margarine
1/2 cup sugar
1/2 cup powdered sugar
1/2 tsp. soda
1/2 tsp. cream of tartar
1/2 tsp. salt
1 1/2 tsp. vanilla
1 beaten egg
2 1/2 cup flour
Cream butter, margarine, sugar and powdered sugar until creamy. Add soda, cream of tartar, salt and vanilla; add beaten egg and flour. Shape dough into balls size of a small walnut. Bake 10 minutes at 375 degrees. When cool, decorate. Yield is 4 dozen cookies.
Old Fashioned Sugar Cookies
1 1/2 cup sifted flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. soda
3/4 cup sugar
1/2 cup shortening
1 egg
2 heaping tsp. milk
1 tsp. vanilla
Sift together flour, baking powder, salt, soda and sugar. Cut in shortening until mixture resembles coarse meal. Blend in egg, milk and vanilla. Roll out on floured board; cut with cookie cutter. Dip glass into additional sugar; press on cookie Place on ungreased cookie sheets. Bake at 375 degrees for about 8 minutes. Yield is 3 dozen cookies.
Pecan Sandies
1 cup butter or margarine
1/4 cup confectioners' sugar
2 tsp. vanilla
1 tbsp. water
2 cups sifted flour
1 cup chopped pecans
Cream margarine with sugar. Add vanilla, water and flour; mix well. Add pecans. Form into small balls. Bake in 300 degree oven for 20 minutes. While still hot, roll in additional confectioners' sugar. When cool, roll again in sugar. Yield is 3 dozen cookies.
Mexican Wedding Cakes
1 cup soft butter or margarine
1/2 cup sifted powdered sugar
1 tsp. vanilla
2 1/4 cups sifted flour
1/2 tsp. salt
3/4 cup finely chopped nuts
Mix together thoroughly butter, powdered sugar and vanilla. Sift together flour and salt; stir in. Add finely chopped nuts. Chill dough. Roll into 1-inch balls; place on ungreased baking sheet. Bake in 400 degree oven until set but not brown. While still warm, roll in additional powdered sugar; cool. Roll in powdered sugar again. Yield is 4 dozen cookies.
