Carrot Cake 2 cup sugar 1 1/2 cup shortening 4 eggs 2 1/4 cup flour 1 1/2 cup chopped nuts 2 tsp. salt 2 tsp. cinnamon 2 tsp. soda 3 cup grated raw carrots,/li> Combine sugar, oil and eggs. Beat at medium speed 2 minutes. Sift dry ingredients together. Add to oil mixture. Beat at low speed for 1 minute. Add grated carrots and nuts. Spread batter in greased and floured 13x9 inch pan. Bake at 300 degrees for 1 hour or until done. When cool, spread on cream cheese frosting. Cream Cheese Frosting 1 - 8 oz. pkg. cream cheese 1/3 stick butter or margarine 1 lb. confectioners sugar 2 tsp. vanilla Beat cheese and butter together. Add vanilla. Then add sugar gradually. Add more sugar to make right spreading consistency. Add a little milk, if it is too stiff. Spread on cake. Carrot Cake to Cooking Recipes
