Here are some great casserole recipes that I enjoyed as a child. All American Casserole 1 cup rice 1 lb. ground beef 1 egg, slightly beaten 2 tsp. grated onion 2 tsp. salt 1 tsp. parsley flakes 1/8 tsp. marjoram Dash of pepper 2 1/2 cups tomato juice 1/2 tsp. sugar 1 pkg. biscuit mix (like Bisquick) 1/4 cup American cheese Combine rice, beef, egg, onion, salt, parsley flakes, marjoram and pepper. Add 1/2 cup tomato juice; mix lightly. Shape mixture into 18 balls. Place in skillet. Add sugar to remaining tomato juice and pour over meatballs in skillet. Bring to boiling point. Transfer the meatballs and tomato mixture to a casserole dish. Turn on oven to 450 degrees. Follow directions on biscuit mix package to prepare. Add shredded American cheese to dry mixture before adding any liquid and continue directions. Spoon droplets of biscuit mix over top of casserole. Place in oven without cover for 15 to 20 minutes. Yield: 6-8 servings. Chop Suey Casserole 1 lb. ground beef salt to taste 1 can cream of mushroom soup 1 can cream of chicken soup 2/3 soup can water 1/2 cup raw rice 1 cup chopped celery 1 onion, chopped 4 tsp. soy sause 1 can chow mein noodles Brown the ground beef with salt. Mix all ingredients, with the exception of the noodles, in a casserole dish. Bake at 350 degrees for 1 hour. Cover with the noodles the last 10 minutes. Serves 6. More casserole recipes below. Five Can Casserole 1 can evaporated milk 1 can condensed mushroom soup 1 can chicken noodle soup I can boned chicken 1 can chow mein noodles Heat milk and soups; add chicken and noodles. Place in casserole. Bake for one hour at 350 degrees. Ground Beef Casserole 2 tbsp. chopped onions 1 lb. ground beef 1 small can tomato sauce 1 medium can mixed vegetables 1/2 tsp. salt 1/2 tsp. pepper Brown onions and ground beef with a little vegetable oil in a skillet. Mix tomato sauce, mixed vegetables, salt and pepper in a casserole dish. Add browned onions and beef. Cook in 350 degree oven for about one hour. Savory Rice Casserole 1/3 lb. hamburger 1 onion, chopped 1 1/3 cup milk 2/3 cup whole kernel corn 1/3 cup rice, uncooked 1/2 can tomato soup Fry hamburger and onion; add other ingredients. Cool on top of stove; pour into casserole. Bake at 325 degrees until rice is done and top is brown. Yield: 6 servings. More casserole recipes below. Savory Spaghetti Casserole 1 lb. ground beef 1/2 cup chopped onion 1/4 cup chopped green pepper 2 tbsp. butter or margarine 1 10 1/2-oz. can cream of mushroom soup 1 10 1/2-oz. can tomato soup 1 soup can of water 1 clove garlic, minced 1 cup shredded, sharp cheddar cheese 1/2 lb. spaghetti, cooked and drained In a large skillet, cook the ground beef, onion and green pepper in butter until the meat is lightly browned and onion and green pepper are tender, stirring often. Add soups, water and garlic. Heat. Blend with 1/2 cup cheese and cooked spaghetti in a 3-quart casserole. Top with remaining cheese. Bake in 350 degree oven about 30 minutes or until bubbling and hot. Makes 4 to 6 servings. Tuna Noodle Casserole 5 oz. wide noodles 1 7 oz. can of tuna 1 cup milk I can condensed cream of mushroom soup 1 cup crushed potato chips Cook noodles, following directions on the package. Separate tuna into large flakes. Grease 12 x 8 x 2 inch casserole and arrange layer of noodles and layer of tuna alternately, ending with noodles. Add milk to soup and pour over noodles; top with potato chips. Bake for 30 minutes at 375 degrees. Yield: 4-5 servings. I hope you enjoy one or all of our casserole recipes.
