Divinity Candy 2 1/2 cups sugar 1/2 cup corn syrup 1/2 cup water 2 egg whites 1 teaspoon vanilla nuts (optional) Cook sugar, syrup and water together to 252 degrees or brittle ball stage. Pour syrup slowly into beaten egg whites. Beat until stiff enough to form peaks; add vanilla and nuts. Drop from spoon onto waxed paper. Another delicious divinity recipe Peanut Butter Divinity 2 cups sugar 2/3 cup milk 1 cup crunchy peanut butter 1 pint jar marshmallow crème Cook sugar and milk to soft ball stage. Add peanut butter and marshmallow crème; stir until melted. Pour in buttered 9-inch pan. Yield: 6 servings. Another yummy divinity recipe Divinity 1/2 cup light corn syrup 2 1/2 cups sugar 1/4 teaspoon salt 1/2 cup water 2 egg whites 1 teaspoon vanilla 1 cup coarsely chopped nuts Combine first 4 ingredients in saucepan. Cook over medium heat, stirring constantly, until sugar is dissolved. Cook without stirring to firm ball stage or 248 degrees. Just before syrup reaches 248 degrees, beat egg whites until very stiff but not dry. Pour about half the syrup slowly over egg whites, beating constantly. Cook the remainder of the syrup to soft crack stage or 272 degrees. Add syrup slowly to first mixture, beating constantly. Continue beating until mixture holds its shape. Add vanilla and nuts. Drop from tip of spoon onto waxed paper. Yield: 1 1/4 pounds. Another perfect divinity recipe Perfect Divinity 2 cups sugar 1/2 cup light corn syrup 1/2 cup hot water 1/4 teaspoon salt 2 egg whites 1 teaspoon vanilla 1/2 cup chopped nuts In a 2-quart saucepan, combine sugar, syrup, water and salt. Cook and stir until sugar dissolves and mixture comes to boiling. Cook to hardball stage or 250 degrees without stirring. Wipe crystals from sides of pan with fork wrapped in damp cloth. Remove from heat. Immediately beat egg whites stiff. Pour hot syrup slowly over beaten whites, beating constantly at high speed on a mixer about 5 minutes. Add vanilla and beat until mixture forms soft peaks and begins to lose its gloss. Add nuts. Drop divinity by teaspoonfuls, pushing off with a second spoon onto a cookie sheet covered with waxed paper. Yield: 25 pieces. Another perfectly divine divinity recipe Divinity Fudge 2 1/2 cups sugar 1/2 cup light corn syrup 1/8 teaspoon salt 2/3 cup water 2 egg whites 1 1/2 cups nuts 1 tablespoon vanilla Combine sugar, syrup, salt and water. Cook until a small amount forms a soft ball when dropped in cold water. Take out 1/2 cup mixture and cook the rest until it forms a hard ball when dropped in cold water. Pour the 1/2 cup of the syrup slowly over beaten egg whites, beating constantly. Add this to cooking syrup; add nuts and vanilla. Keep beating until thick. Either drop on buttered surface or pour into 9 x 9 inch buttered pan. Another delightful divinity recipe Almond Divinity Candy 4 cups sugar 2/3 cup light corn syrup 1 cup water Dash of salt 2 egg whites 1 teaspoon vanilla 1/2 teaspoon almond extract 3/4 cup chopped walnuts or candied fruit Mix the first 4 ingredients well; place on low heat and keep covered until mixture starts to boil and all crystals disappear from sides of pan. Cook to 253 degrees or until a little syrup dropped from the edge of a spoon will form a hard ball. Just before the syrup finishes cooking, beat egg whites until stiff but not dry. Using electric mixer at fast speed, add the hot syrup to beaten whites in a thin stream and continue beating until candy loses it gloss. Add flavorings; turn off beater and stir in nuts or candied fruit. Pour into buttered pan or platter, and when set, mark off into squares. A teaspoon may be used to drop candy onto waxed paper.
