Ground Beef Stroganoff 2 pounds ground beef, cooked and drained 2 medium onions, chopped 1 cup beef consommé or beef stock 1 can (4ounces) mushroom sliced or pieces, drained 3 tablespoons tomato paste 2 garlic cloves, minced 1 to 1 1/2 teaspoons salt 1/4 teaspoon pepper 2 tablespoons all-purpose flour 3/4 cup minced fresh parsley, optional Hot cooked noodles In a 3-quart slow cooker, combine the first eight ingredients. Mix well. Cover and cook on low for 6 hours. In a small bowl, combine the flour and sour cream until smooth. Stir into the beef mixture. Cover and cook 1 hour longer or until thickened. Meat Loaf 1 1/2 lb. ground beef 3/4 cup oatmeal 1/4 cup chopped onion 1 1/2 tsp. salt 1/4 tsp. pepper 1 beaten egg 3/4 cup milk 1/3 cup catsup 2 tbsps. brown sugar 1 tbsp. yellow mustard Combine the first 7 ingredients for the meat loaf. Mix thoroughly. Pack into a 9 x 5-inch loaf pan. Mix the remaining ingredients for the sauce. Pour over the meat loaf. Bake for about 1 hour at 350 degrees. Let stand before slicing. Pinto Bean Cheeseburger Loaf 1 lb. hamburger 1/2 tsp. oregano 1 tsp. salt 1/4 tsp. pepper 1 4-oz. can tomato sauce 1/4 cup chopped onion 1/4 cup chopped green pepper 1/2 cup fine dry bread crumbs 2 cups canned pinto beans Heat oven to 425 degrees. Mix together all ingredient. Spread in greased casserole dish. CHEESE TOPPING: 1 egg, beaten 1 8-oz. wedge mild cheddar cheese, grated 1/4 cup milk 1/2 tsp. each salt, dry mustard and Worcestershire sauce Mix all ingredients together and spread over filling and bake. Pigs In Blankets 1 medium cabbage 1 large onion Butter 1 lb. ground chuck beef Salt and pepper to taste Celery salt to taste (optional) 1 cup cooked rice 1 can tomato paste 2 paste cans of water 3 paste cans of tomato juice Parboil cabbage leaves in boiling water; cool before handling. Separate leaves and trim thick membrane to roll easily. Saute onion in butter. Fry beef until lightly brown. Add salt, pepper and celery salt. Combine with rice. Mix well. Spread each leaf with large tablespoon of mixture. Roll, folding ends to seal in mixture. Put folded side down in buttered dish. Blend tomato paste, water and tomato juice; bring to a simmer. Pour over pigs in blankets. Bake at 450 degrees for 20 minutes, then 350 degrees for one hour. Yield: 3-4 servings. Stuffed Green Peppers 1 8-oz. can tomato sauce 1/2 lb. ground beef 1 cup dry bread crumbs 1 tsp. salt 1/4 tsp. pepper 1 tbsp. chopped onion 4 large green peppers 1 cup boiling water Mix first 6 ingredients together. Cut thin slice from stem of each green pepper; wash and clean out seeds. Cook in boiling water for 5 minutes and drain. Stuff peppers lightly with meat mixture. Stand upright in small baking dish.
