I'm going to take a stab at your question. Is the gray pipe, galvanized steel? Is the white pipe, PVC or PEX? It sounds like you have an older home with galvanized steel water pipe and due to poor water flow, because it's rusty inside, you want to replace it. That's a good idea! The manifold system is used with PEX and is simply a way to send water to multiple connections without loss of pressure or flow, within limits of course. See the picture here. Does this look like what you are trying to use? If so, the manifold in the lower right corner is simply a tool to reduce connections and make it easy for plumbers to install pipe quickly. Make sure to use the correct fittings and use only the one's specified by the pipe manufacturer. Otherwise, you WILL have leaks. Buy the correct crimping tool as well as a test "go/no go" gauge to test every crimp. If you need any additional information, let us know.
