Muffin Recipes



Here is the first one of my muffin recipes


Banana Bran Muffins

  • 3/4 cup flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoon sugar
  • 1/3 cup milk
  • 3/4 cup mashed bananas
  • 1 egg, well beaten
  • 3 tablespoons melted shortening
  • 1 1/2 cups 40% bran flakes
Combine dry ingredients in a bowl. Mix milk, mashed bananas and egg; add to dry mixture. Add shortening; mix. Fold in bran flakes. Pour into muffin tins. Bake at 425 degrees 15 to 20 minutes. Yield: 8 servings.





Here is another one of my great muffin recipes.


Blueberry Muffins
  • 1/2 cup milk
  • 1/4 cup salad oil
  • 1 egg, beaten slightly
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup well-drained fresh blueberries
Stir milk and salad oil into egg. Sift together and add dry ingredients. Stir just until flour is moistened. Fold in blueberries. Batter should be lumpy. Fill greased muffin cups 2/3 full. Bake 20 to 25 minutes at 400 degrees. To substitute canned berries, reduce measure to 3/4 cup. Yield: 12 servings.

Whole Wheat Muffins
  • 1 cup sifted flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup whole wheat flour
  • 1 egg
  • 3 tablespoons vegetable oil
  • 1 cup milk
Preheat oven to 425 degrees. Sift together the white flour, baking powder, salt and sugar. Add whole wheat flour and mix together. In a separate bowl, beat egg; add oil and milk. Add liquid ingredients all at once to the dry ingredients. Stir only until dry ingredients are barely moistened. Do not beat. Fill greased muffin tins 2/3 full. Bake in 425 degree oven for 20 to 25 minutes. Yield: 12 muffins.






Here is another one of my muffin recipes.


Cornmeal Muffins
  • 3/4 cup cornmeal
  • 1 1/4 cup flour
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 1 1/2 cup milk
  • 4 tablespoons melted shortening
Mix first 5 ingredients. Add beaten egg and milk to make stiff batter. Add melted shortening. Bake in muffin pans about 20 minutes at 375 degrees.






Here is another one of my muffin recipes.


Carrot Ring or Muffins
  • 1 cup shortening
  • 1/2 cup brown sugar
  • 1 beaten egg
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 1/2 cups grated carrots
Cream the shortening and sugar thoroughly. Add egg. Dissolve spices in 1 tablespoon hot water. Add to mixture. Sift dry ingredients together. Add carrots, then dry ingredients. Bake in a greased ring or muffin tins for about 1 hour at 350 degrees. Yield: One ring or 12 muffins.






Here is another one of my muffin recipes.


Nut Muffins
  • 2 cups sifted flour
  • 3 teaspoons baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 egg beaten
  • 1 cup milk
  • 1/4 cup soft or melted shortening
  • 1/2 cup chopped nuts
Heat the oven to 400 degrees. Grease muffin tins. Sift together flour, baking powder, sugar and salt in a large bowl. Make a well in the center. In a small mixing bowl, beat egg until foamy. Add milk and melted shortening. Add the milk mixture all at once to the dry ingredients. Stir in nuts; keep stirring until dry ingredients are moist but mixture is still slightly lumpy. Fill muffin tins 1/2 to 1/3 full. Bake for 15 to 20 minutes. Yield: 12 servings.






Here is another one of my muffin recipes.


Apple Walnut Muffins
  • 1 3/4 cups all-purpose flour, pre-sifted
  • 2 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/4 cup plus 6 teaspoons sugar
  • 2 eggs
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • 3/4 cup chopped black walnuts
  • 3/4 cup chopped dates
  • 1 cup grated raw applies
  • 2 apples
  • 2 teaspoon cinnamon
  • Combine flour, baking powder, salt and 1/4 cup sugar. Beat eggs in a separate bowl; add milk combined with butter. Stir the liquid ingredients into the flour mixture quickly. Add chopped black walnuts, dates and grated apples. Spoon the batter into greased and floured muffin pans, filling each about 2/3 full. Peel and core apples. Slice into thin slices. Dip each apple slice in a mixture of cinnamon and 6 teaspoon sugar. Place 1 slice on top of each muffin. Fill the hole in the center of the apple with black walnuts. Bake muffins in a pre-heated 425 degree oven for 25 minutes. Yield: 15 muffins.
