Pecan Pie

Beat the eggs lightly; add 1/2 teaspoon salt and brown sugar. Beat well; add syrup, vanilla and butter. Beat; add pecans. Stir a few times.

Put flour, 1/2 teaspoon salt and sugar in a bowl; work in shortening until like the texture of cornmeal. Add little water at a time until easy to handle. Roll between waxed paper sheets. Press dough into pie plate. Pour filling into unbaked crust. Bake 15 minutes at 375 degrees and for 35 minutes at 325 degrees. Yield: 6-8 servings.








Southern Pecan Pie
  • 1 cup pecan halves
  • 1 9-inch unbaked pastry shell
  • 3 eggs
  • 1 tablespoon melted butter
  • 1 cup light corn syrup
  • 1/2 teaspoon vanilla
  • 1 cup sugar
  • 1 tablespoon flour
Arrange pecan halves in the bottom of the pie shell. Beat eggs; add butter, corn syrup and vanilla. Stir until well blended. Combine sugar and flour; blend with egg mixture. Pour over nuts in pie shell. Let stand until nuts rise to surface. Bake in a 350 degree oven for 45 minutes. The nuts will glaze during the baking period. Yield: 6 servings.








Tasty Pecan Pie
  • 1 tablespoon flour
  • 3/4 cup sugar
  • cup light corn syrup
  • 1/4 cup milk
  • 2 eggs, slightly beaten
  • 1 tablespoon butter
  • cup (heaping) pecans, chopped
Mix together flour and sugar; stir in remaining ingredients. Put in unbaked pie crust. Bake about 20 minutes at 350 degrees or until pie is set and firm. Yield: 6-8 servings.
