Potato Salad

Potato Salad Vegetable Mixture:

• 8 medium potatoes
• 1 medium onion, chopped
• 1 cup celery
• 4 hard boiled eggs
• 2 small carrots, grated
• 1 1/2 tsp. salt

Dressing:

• 1 1/2 tsp. flour
• 1/2 cup sugar
• 1 tsp. mustard
• 2 tbsp. butter
• 2 eggs
• 1/2 cup vinegar
• 1 ½ cup water

Cook potatoes in jackets until soft. Cool and peel. Dice potatoes, eggs, onion and celery. Add grated carrots. To make the potato salad dressing, mix together the dry ingredients and add eggs, vinegar and water. Melt butter in saucepan and add dressing. Cook until thickened. Cool and pour over potato mixture and mix lightly. If desired, 1/2 cup of mayonnaise or sandwich spread may be added to dressing before it is poured over potato mixture. Serves 6.
